UPDATED May 20 at 9:49 a.m. to include additional comment from Poulette Bakeshop ownership.

Exciting news for fans of Poulette Bakeshop in Parker, Colorado! The popular bakery is gearing up for a move to a bigger and better location, but fear not, it will still be within reach for locals.

Poulette Bakeshop will be relocating this fall to a more spacious storefront on Mainstreet in Parker, specifically at The Juniper luxury apartment complex. The new 2,800-square-foot space will allow owners Carolyn Nugent and Alen Ramos to continue delighting customers with their delectable French pastries and other treats.

Nugent and Ramos, both accomplished pastry chefs, founded Poulette Bakeshop in 2020, initially operating out of their kitchen before opening a commercial space in 2021. Their creations, including macarons, cookies, breads, and more, have garnered national recognition, with a recent nomination for the James Beard Foundation’s Outstanding Pastry Chef or Baker award and a mention in The New York Times as one of the best bakeries in America.

Expressing their excitement for the move, Nugent stated, “It has long been our dream to operate Poulette Bakeshop in the heart of Parker’s Mainstreet, and we’re thrilled to be expanding in a way that allows us to better serve our community. This new chapter deepens our connection to the community through service and culinary tradition.”

With the new location set to open in fall 2025 and the original bakery’s lease expiring in 2026, there will be a period of overlap where customers can enjoy treats from both spaces. Nugent mentioned that they are still finalizing plans for the existing space, ensuring that customers can continue to indulge in their favorite baked goods.
