Featured Recipe: One-Pan Sunday Chicken & Veg

A rustic, no-fuss dinner that’s perfect for lazy Sunday afternoons. This dish is all about big flavor, easy cleanup, and bringing everyone together around one pan.


Ingredients (Serves 4–6)

  • 4–6 bone-in, skin-on chicken thighs (or drumsticks)
  • 2 tbsp olive oil (or avocado oil)
  • 2 tbsp Brownstone Blends Everyday Blend
  • 1 tsp smoked paprika (optional)
  • 1 tsp garlic powder (optional)
  • 1 tsp salt (adjust to taste)
  • ½ tsp black pepper
  • 1 lb baby potatoes, halved
  • 2 large carrots, peeled & cut into chunks
  • 1 red bell pepper, sliced into strips
  • 1 zucchini, sliced into half-moons
  • 1 red onion, cut into wedges
  • Fresh parsley for garnish

Instructions

1. Preheat & Prep
Set oven to 400°F (200°C). Pat chicken dry for crispier skin.

2. Season the Chicken
Mix Everyday Blend, paprika, garlic powder, salt, and pepper in a small bowl. Rub seasoning under and over the chicken skin.

3. Assemble the Pan
On a large sheet pan, toss potatoes, carrots, bell pepper, zucchini, and onion with olive oil and ½ tbsp Everyday Blend. Spread evenly.

4. Add Chicken
Nestle seasoned chicken pieces among vegetables, skin side up. Don’t overcrowd—give everything room to roast.

5. Roast
Bake 40–45 minutes until chicken reaches 165°F and vegetables are tender. For extra-crispy skin, broil for 2–3 minutes at the end.

6. Serve & Enjoy
Sprinkle with fresh parsley and serve straight from the pan for a cozy, family-style presentation.
