Blue Sparrow Coffee to open fourth location in Tabor Center

Jeffrey Knott, the owner of Blue Sparrow Coffee, is constantly receiving offers to open new outposts. However, with three successful locations already under his belt, Knott is selective about where he chooses to expand.

Out of the numerous offers he receives, Knott only accepts a small fraction. He believes that Blue Sparrow adds value to commercial buildings and seeks partners who understand and appreciate the unique offering of his coffee shops.

When the owners of the Tabor Center at 1200 17th St. approached Knott, he saw a potential match. After touring the space, he knew that it would be the perfect home for Blue Sparrow’s fourth location.

Knott, who co-owns the business with Fiona Arnold, is currently in the design phase for the 1,000-square-foot build-out at the Tabor Center. The new location will feature Blue Sparrow’s signature coffee, pastries, and light bites near the 17th Street entrance.

Despite being housed in a former storage closet, the new outpost will have a unique identity with a green-colored brick facade to attract passersby. Outdoor patio space and landscaping elements will also be incorporated into the design.

With a “long-term” lease in place, Knott anticipates that the new location will open by the end of the year. He is optimistic about the future success of downtown Denver, citing the Downtown Development Authority’s investments and upcoming office-to-residential conversions.

While Knott’s existing locations in RiNo, Uptown, and on Platte Street are performing well, he prioritizes building relationships with customers and fostering a sense of community over rapid sales growth.

As downtown Denver undergoes revitalization, Knott is confident that people will return to the area, potentially even more than before the pandemic. The steady growth and commitment to creating a welcoming environment for customers have been key principles guiding Blue Sparrow’s success over the past decade.
