Daniel Boulud’s Le Pavillon celebrates 5th anniversary — and deserves credit for saving NYC dining from pandemic
The renowned restaurant in Midtown that rescued dining during the pandemic recently marked its fifth anniversary. Chef/owner Daniel Boulud not only deserves credit for the exceptional Michelin-star menu and stunning setting at Le Pavillon but also for influencing the decision to lift indoor capacity limits in NYC dining rooms in the spring of 2021.
Boulud, along with Sebastien Silvestri, CEO of Dinex Group, approached then-Gov. Andrew Cuomo and then-Mayor Bill de Blasio demanding a guarantee of full seating capacity before opening Le Pavillon. This led to the restoration of full seating capacity, which was crucial for the restaurant’s success amidst economically challenging times.
Despite the challenges of a predominantly empty city due to office buildings being unoccupied, Le Pavillon stood out as a beacon of hope for the future of Midtown. The restaurant’s high-end dining experience, although priced at $125 per head initially, attracted early customers who saw it as a symbol of New York’s resilience.
